October’s Cookbook club recipe features a very popular fall staple, the Pumpkin! We hope these delicious waffles inspire you to use more pumpkin this fall season.
We did not go with the cookbook’s recipe for the pumpkin topping, instead we took a far more decadent approach, adding seasonal fruits, syrup and a dollop of whipped cream.
Of course, part of the joy/challenge to cooking is being able to substitute out ingredients – whether it’s for health reasons/dietary restrictions or in our case, the availability of seasonal fruit, we say GO FOR IT!
